Ok, I was going to wait to post this recipe til tomorrow but it has been brought to my attention that my sister needs this pronto!! She just posted on Facebook, "Clearly tomorrow is grocery shopping day........no other time would we be eating chocolate chip pancakes, eggs, and spanish rice for dinner."
It's ok, I am here to help--these pizzas were sooo good! The crunch from the pita bread reminds me of Totino's pizza crust, the Pizza sauce is full of tons of "hidden" nutrition & the soy cheese melts to add a rich creamy-ness. This recipe has comparable protein amounts but far more fiber than an "english muffin with real mozzarella cheese pizza" like we used to make growing up all of the time! Feel free to saute up some fresh veg with olive oil and customize your own personal pan!
Cheesy Pita Pizzas
1 cup/handful fresh spinach
1/2c canned beans (navy/pinto/kidney)
**I had some leftover Navy beans to use up so that's what I used
1/2c carrot puree/babyfood
10oz Soy mozzarella cheese
8 whole grain pita pockets
Place pizza sauce, spinach, beans and carrot pureed/babyfood into blender and blend til evenly pureed.
Place sauce on pita pockets and spread evenly with back of spoon.
Add soy cheese and any other desired toppings. Bake in the oven at 400 degrees for 20 minutes. Take pizzas out of the oven and let rest for about 5 minutes before cutting. Enjoy!!

ReplyDeleteThis was an absolute hit! We did substitute mozzarella cheese for the soy cheese. Very Yummy! Lots of flavor and the kids loved having their own individualized pizzas:) I'm going to share this one with some of my coworkers with little kids! Loved making a kid friendly meal healthier!
